Water shields are cultivated by taking advantage of the clean water and soil conditions. The sight of people harvesting water shields in small boats is a local specialty. Asparagus harvesting begins between December and February. Harvested despite the cold winters of Akita Prefecture, a region with heavy snowfall, the asparagus is exceptionally sweet and chewy. This region offers a wide variety of water shield-based delicacies and has been recognized as having the highest water shield consumption in Japan. With the town even having a water shield day, water shields are inseparable from the area of Mitane Town, Yamamoto District.
